Specially selected parcels of Cabernet Sauvignon from our own vineyards and some from long-term growing partners across Central Victoria were fermented on skins for 7 days to achieve rich color and concentrated flavors. The addition of 7% Merlot fills out the middle palate and introduces peppery spice, contributing to a long, toasty profile. Post-fermentation, the wine was gently pressed and aged on French oak for 10 months, striking a balance with a sweet, toasty finish.FOOD MATCH
Slow-cooked beef brisket with a dark cherry reduction and garlic mashed potatoes, or an aged cheddar cheese platter with figs and artisanal bread.
